Mexican-Themed School Auction
Last weekend, Our Lady of Refuge School in Long Beach held their fundraising auction at The Centre at Sycamore Plaza. They choose a Mexican-theme for the evening which was manifested in both the decor and the menu items.
The evening started with tray-passed hors d’oeurves.
Masa and queso cake
Topped with oaxacana chicken and finished with guacamole escabeche, pickled red onions and house made corn nuts
Black Bean Empanadas
Served with an avocado cream dipping sauce
The Salad was The Colores de south of the border
It had Shredded romaine, toasted pepitas, nopales, diced corn, queso fresco, red beets, tomatoes, with roasted jalapeño cilantro crema dressing
The Entrée was a Coal roasted breast of chicken
Filled with Anaheim chilies, Pepitas and Queso fresco, served with a tequila lime tomatillo sauce and topped with a chihuahua cheese
Accompanied with savory jalapeño and corn flan and seasonal roasted vegetables
Two desserts were offered. The above: Arroz con leche cups-topped with a cinnamon sprig
